Roasted Vegetables and Italian Sausage

Ingredients

Italian Sausages, sliced into bite size pieces
|
|
1 |
|
large onion, chopped
|
|
1 |
|
large portabello mushroom or several smaller ones, chopped
|
|
1 |
|
tomato, chopped
|
|
1 |
|
bell pepper, chopped
|
|
1 |
|
carrot, sliced diagonally into 1/4- inch slices
|
|
|
|
Salt to taste
|
|
|
|
Pepper to taste
|
|
Directions:
Preheat oven to 400 degrees F
Place sausage across the bottom of a large baking or roasting pan.
Cover with chopped vegetables.
Spray lightly with nonstick cooking spray and sprinkle with salt and pepper to taste.
Bake for a total of 30 to 40 minutes, stirring every 10 to 15 minutes. (The mushrooms and tomato will make the dish moist and juicy.)
Serve alone, over hot rice or on a sub bun.
